Celestial Chai Muffins



Celestial Chai Muffins


These oh-so-simple muffins are made using Chai tea mix as a shortcut. Make sure you make a lot, these are gone in minutes.

Tools:

Sifter

Mixing bowl

Mixing spoon

Mixing bowl

Mixing spoon

Mini muffin tins lined with baking cups*


Ingredients:

1 1/3 cup whole wheat pastry flour

1/3 cup Chai tea mix**

1 1/4 tsp baking soda

1/2 tsp salt

1 tbsp flax meal whisked with 6 tbsp water

1 1/3 cup apple juice concentrate



Directions:

1. Preheat oven to 375 degrees.

2. Sift first 4 ingredients directly from measuring utensils into mixing bowl. Mix.

3. In separate bowl, mix together flax mixture with juice.

4. Stir wet ingredients into dry ones. “Fluff”.

5. Slowly drop batter into muffin tins. “Set” once.

6. Bake in oven for 12 to 17 minutes, until a toothpick comes our clean and if you press the muffin top lightly it bounces back.

7. Let cool. Remove from tin. Serve.

Yield: about 24 muffins

*If you want to make regular size muffins, follow the recipe but increase baking time by 10 to 15 minutes.

**Found in most grocery stores where the tea and coffee are located.
